Some recipes simply stay.
This one has been in my kitchen since 2010. I don’t even remember exactly where I first found it, but somehow it has stayed with me all these years — one of those simple recipes that is worth keeping.


These are simple oatmeal and peanut butter cookies, made without eggs. Ground flaxseed mixed with water acts as the binder. Or, if you prefare add one egg instead.
Oatmeal – Peanut Butter Cookies

Ingredients
- 2 cups rolled oats
- 2 cups all-purpose flour
- 2 tablespoons baking powder
- 2/3 cup oil
- 1 cup peanut butter (~240 g)
- 2/3 cup brown sugar
- 1/2 cup water, plus up to 1/4 cup more if needed
- 2 teaspoons vanilla extract
- 4 tablespoons ground flaxseed (or one egg)
Directions
- Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
- In a small bowl, mix the ground flaxseed with the water and let it sit for a few minutes.
- In a large bowl, mix the flour, rolled oats, and baking powder.
- In another bowl, combine the oil, peanut butter, brown sugar, vanilla extract, and flaxseed mixture. Add to the dry ingredients and mix into a dough. If the dough seems too dry and is difficult to mix, add a little more water.
- Drop about 40 spoonfuls of dough onto two baking sheet. Flatten each one with a fork.
- Bake for 10–20 minutes, until lightly golden brown.

Can you imagine—I didn’t even eat peanut butter before 2010! 😂 Now I love it on apples (so American 😄), and in cookies, smoothies, and ice cream… Sometimes I even eat it straight out of the jar. 🙈 But peanut butter and jelly? No way—that’s just too American for me!

Thank you! If you like your cookies sweet, add more sugar. These aren’t that sweet. I like to bake for my kids, so I can add less sugar 🙂 We ended up having 2/3 cups of sugar instead of 2 cups of sugar 🙂
I always try to cut back on the sugar. Most recipes are way too sweet. But we can always adjust these things to our liking.

I am usually not a cookie baker nor eater – but quite like our Australian ‘Anzac’s . . . not that far from what you show! I you love a biscuit with your coffee or tea . . . yes, please!

I love oatmeal peanut butter cookies. And oatmeal chocolate chip cookies. I always use eggs in mine though.
Two TABLESPOONS of vanilla extract??!! That’s a massive amount!
Oh, that might actually be the problem with comparing recipes made with ingredients I have here in Latvia and the ones you have in your country 🙂 Vanilla extract can vary so much — mine is a very light, sweet liquid, so I bet it might taste quite different from other vanilla extracts and change the result.
Also, I would need your suggestion on how much you would put yours?!
