Lavash with Hummus and veggies + veggie salad

This recipe is super simple—only 5 ingredients plus Lavash! One bowl, fresh, guilt-free, and no extra salt added. You’ll either love it or not—let’s see…

Serves: 2

Ingredients:

  • 1 large cucumber
  • 1 tomato
  • 1/2 bell pepper
  • 1/4 iceberg lettuce
  • 2 tbsp hummus (plus more for spreading on Lavash)
  • Dill (fresh or frozen, optional)
  • Lavash

Directions:

  1. Cut all the veggies (except lettuce).
  2. Mix the veggies with dill in a bowl.
  3. Spread hummus on the Lavash and add chopped lettuce.
  4. Top with 1/3 of the veggie mix (or less, depending on the size of your Lavash).
  5. Roll the Lavash and cut it in half.
  6. For the veggie salad: Add 2 tbsp hummus to the remaining veggie mix and stir well.
