Serves: 2
Ingredients:
- 1 large cucumber
- 1 tomato
- 1/2 bell pepper
- 1/4 iceberg lettuce
- 2 tbsp hummus (plus more for spreading on Lavash)
- Dill (fresh or frozen, optional)
- Lavash
Directions:
- Cut all the veggies (except lettuce).
- Mix the veggies with dill in a bowl.
- Spread hummus on the Lavash and add chopped lettuce.
- Top with 1/3 of the veggie mix (or less, depending on the size of your Lavash).
- Roll the Lavash and cut it in half.
- For the veggie salad: Add 2 tbsp hummus to the remaining veggie mix and stir well.
