If you caught my previous post, you know I had an apple-filled adventure after a friend’s birthday party—coming home with a staggering 15 kilos of apples! (You can read all about that experience here.) It was an incredible challenge, and I turned my Sunday into an apple processing marathon.
I’m excited to share that I’ve been working on turning those apples into delicious apple pie filling for winter storage. So here is the actual recipe:
Apple Pie Filling for Winter (Without Clear Jel)
Not sure weather the spices will be right.

Ingredients
- 2,5 kg apples
- 3 cups sugar
- 3 sticks cinnamon
- 6 whole allspice
- 6 whole cloves
- 3 cups water
Directions
- Prepare the Apples: Peel, core, and slice the apples evenly.
- Make the Syrup: Combine sugar, spices, water, and apple juice in a pot. Cook until the sugar dissolves and the mixture boils.
- Add the Apples: Drain and add the apple slices to the syrup. Cook until the apples soften slightly.
- Can the Filling: Ladle the mixture into sterilized jars, leaving 1 inch of headspace. Remove air bubbles, wipe the rims, and secure the lids.
- Process the Jars: Process in a boiling water bath for 25 minutes. Cool completely on a towel or rack.
Thicken the Filling when using: Mix 2 tablespoons of potatostarch with 1/4 cup of water for each 850ml jar of filling. Heat the filling in a saucepan until it bubbles, then stir in the potatopstarch mixture. Cook for 2-3 minutes until thickened, and it’s ready to use in pies, tarts, or other desserts.
