After making crème brûlée over the holidays, we ended up with a mountain of egg whites. I didn’t want to waste a single one, so we brainstormed what to make next. That’s how chocolate mousse entered the picture — our first time making it!

Nelle was thrilled. She has a true love for anything chocolaty, so this was the perfect project to do together. We chopped, melted, whipped, and folded our way to a creamy, airy dessert. The kitchen was full of chocolate aromas, laughter, and a little mess — but that’s part of the fun.



Watching the mousse set in the fridge and imagining how it would taste later was a sweet kind of anticipation. By the time we scooped the first spoonful, all the effort and leftover egg whites felt completely worth it. It was a small holiday adventure that turned into a delicious memory.
Chocolate Mousse with egg whites
Ingredients
- Dark chocolate: 180–200 g (good quality, about 70% cocoa)
- Egg whites: 6
- Heavy cream (35%): 840 ml
- Sugar: 60 g
- For serving: whipped cream, chocolate shavings, or berries
Directions
- Chop the dark chocolate and melt it over a double boiler or in the microwave. Let it cool until just warm, not hot.
- In a large bowl, whip the heavy cream to soft peaks. Set aside.
- In a clean, dry bowl, whisk the egg whites until foamy. Gradually add the sugar and continue whisking until glossy soft peaks form.
- Gently fold the melted chocolate into the egg whites using a spatula, keeping the mixture light and airy.
- Fold in the whipped cream in batches until fully combined and smooth.
- Divide the mousse into 6 serving dishes (glasses, ramekins, or dessert cups).
- Refrigerate for at least 2–3 hours, preferably overnight.
- Serve topped with lightly whipped cream, chocolate shavings, or berries.
Stayed in refrigerator up to 5 days… only because someone put a few behind the pot of gray peas!
