This is my twist on a classic tomato sauce—perfect with vegan pasta, of course! It’s flavorful, simple to make, and always a hit at our dinner table.
According to Wikipedia:
“Tomato sauce is any of a very large number of sauces made primarily from tomatoes, usually to be served as part of a dish (rather than as a condiment). Tomato sauces are common for meat and vegetables, but they are perhaps best known as sauces for pasta dishes.”
This version is vegan, hearty, and packed with comforting flavors—ideal for cozy evenings at home.
Serves: 2–4
Ingredients:
- 2 tbsp olive oil
- 1 carrot, grated
- 1 onion, finely chopped
- ½ red bell pepper, finely chopped
- 2 garlic cloves, minced
- 1 can diced tomatoes
- 2 tbsp chopped sun-dried tomatoes in olive oil
- 1 tsp dried marjoram
- 1 tsp dried oregano
- ½ tbsp dried basil
- Salt and pepper to taste
Directions:
- Heat olive oil in a large saucepan over medium heat.
- Add onion, garlic, bell pepper, and carrot. Sauté for 10–15 minutes, until the veggies are soft and fragrant.
- Stir in the canned tomatoes, sun-dried tomatoes, marjoram, oregano, basil, and a pinch of salt.
- Let it simmer on low for 2–5 minutes to blend the flavors.
- Serve with your favorite pasta and a sprinkle of vegan parmesan cheese (recipe coming soon!).
