Healthy Mini Pancakes: A Perfect End (or Start) of Week

Ah, pancakes. Where would we be without them? I fondly remember those summer days spent at Grandma’s house, where pancakes were a cherished evening treat. Back then, the routine was always the same. Before we could enjoy those golden, fluffy pancakes, we had to finish a hearty, savory meal. But that was never a real obstacle, especially when you’re living in the countryside. After a day spent outdoors, working up an appetite in the fresh, invigorating air, a little extra food was never a problem.

In other homes, pancakes are made every Sunday morning because it’s the only free morning for the family mom, who treats her loved ones to pancakes (or maybe just clears out the fridge of slightly outdated milk?). I cherish both experiences and have created my own traditions for some time now.

Recipe for helthier Mini Pancakes



With the Phones and Internet the pancakes should get helthier. I love this version.


Ingredients

  • 1-2 ripe bananas
  • 3 tablespoons ground flaxseeds
  • 1/4 cup warm water
  • 1 1/4 cups water
  • 1 1/3 cups flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon pure vanilla extract

Directions

  1. Mash the bananas in a bowl, then add the ground flaxseeds and 1/4 cup of warm water. Mix well and let it sit for a few minutes.
  2. Add the flour, baking powder, vanilla extract, and the remaining water. Stir gently, making sure not to overmix. It’s important to leave some lumps in the batter for fluffier pancakes.
  3. Fry the pancakes. Serve and enjoy!

    1. You are welcome 🙂 Somehow I regularly have bananas that need to be used up! Also, if you don’t have the ground flaxseeds substitute with the egg. If you can, let me know how it went 🙂
