These savory potato pancakes are from my brother’s girlfriend Ilona. Love them so much she backed them twice in two day time. If I ask more she will back again, I guess!
I never ate such a tasty savory potato pancakes. I have to share the recipe. Wich is approximate! I have no need to bake them and make exact recipe.
Delicious savory potato pancakes
Russian cuisine

Ingredients
- 3 onion peeled
- 6 potatoes peeled and washed
- 3 eggs
- 1- 1 1/2 cups of flour
- salt, pepper
- oil for frying
- sour cream for serving
Directions
- First, shred the onion using a fine grater. It keeps potatoes from getting gray. On the top of onion, shred the potatoes.
- Add eggs, salt, pepper and mix until eggs are completely beaten and a bit fluffy.
- Add flour as needed and mix until combine.
- Heat up a skillet. Then add about two tablespoons of potato mixture per pancake.
- Cook both sides until they are golden brown.
- Serve with sour cream.

I was wondering what to do for lunch. We just made a small batch (there are only two of us, and we’re not big eaters). I shall make them again. I may vary them with the addition of spinach or kale; or maybe cheese. Mmmm. Ooh. What about cheese and cumin?
This is a basic recipe. Here in Latvia, we top the pancake with sour cream, cream cheese, bacon or salamon. I would love to hear from you when you try with kale or spinach.
Just tried with more onion (one medium onion to two potatoes) and added in some chopped smoked salmon. I also coated with a mix of breadcrumbs and parmesan cheese, and served with butter sauce. Delicious!

Our Mum’s variety of these was called potato cakes. We really liked them as children
My father’s mother, who’s been dead 45 years already, used to make us potato pancakes, which she called by the Yiddish term latkes.
Do you still make latkes yourself? It must be special to recreate that recipe and bring back those memories. I find that cooking family recipes is a wonderful way to keep our traditions alive and feel connected to those who came before us. I’d love to hear more about any other dishes your grandmother used to make or if you’ve added your own twist to her recipe!
No, I’ve never made latkes, nor in fact any of the foods my grandmother made. We regret that we didn’t get the recipe for her hamantaschen.
