The weather is absolutely terrible today – cold, wet, windy, and grey. You know, the kind of day that feels like time has jumped backwards into late November. I kept looking out the window, hoping for at least a patch of sunlight, but nope… just drizzle and clouds all day long.
Solstice? Sure – but which one? Winter? Feels like it!
I start craving Christmas. Not the big tree or the presents – but the food. The warm, sweet, spicy smells that make you feel like you’re wrapped in a blanket, even if you’re just standing by the stove.


So I gave in and made something that instantly brings me holiday comfort: cinnamon sugared almonds. They’re warm, crunchy, a little sweet, a little spiced, and honestly… they made the whole house smell like a Christmas market.
They’re quick to make, too – no oven required. Just a skillet, a spoon, and about 15 minutes of stirring (which honestly felt kind of therapeutic today).
Here’s the recipe if you want to make your own cozy moment:
Cinnamon Sugared Almonds
A sweet and crunchy treat perfect for snacking or gifting during the holidays.

Ingredients
- 1/4 cup water
- 1/2 cup sugar
- 2 cups almonds
- 1/8 tsp pink Himalayan salt
- 1/2 tbsp ground cinnamon
- 1/2 tbsp Muscovado sugar (optional)
Directions
- In a skillet, bring the water and sugar to a boil.
- Add the almonds and cook, stirring constantly, until most of the water has evaporated (about 5–10 minutes).
- Add the cinnamon, salt, and Muscovado sugar. Cook for another 2–5 minutes, stirring, until the almonds are dry and coated.
- Pour the almonds onto a large sheet pan and let them cool completely.
