For the first time in 5 years – I slept in (I’m not sure about the right definition here… Overslept… Neah!)
Let me explain. My dear mother is with us right now. I woke up at 10am. Some may say that it is not “slept in” if you have to get to work.. it’s overslept! Maybe. But I don’t have to get to work. I’m working 24/7! Usually I’ve been woken up at 8am. Today I woke up at 10am… the reason was super nice smell from the kitchen (!?).. Oh! I know this smell! My mother is making pancakes! The special ones! Those made from quark cheese! I stayed in bed until they were ready! For the first time in 5 years! Relaxed. I took the extra 10 minutes in bed to stretch! Still feels like it’s Sunday… or not – Janis is going to Riga for two days and will be back tomorrow late night.

P.S. Quark cheese is something that you can’t get (the right one!) outside the post-Soviet countries!

Without a doubt! The english name Syrniki. Try google and find the recipe! But the problem might be – not the right “cheese”.

In the UK it is cottage cheese, but for right one better visit polish shops.

I enjoyed that morning a lot! It was my first time in 5 years!!! I think I’ll try to make cottage cheese at homemade and put the recipe here. For those who want to try real latvian “biezpiens” 🙂
