This is my favorite winter breakfast recipe! I love how leek gives “spring taste” to the quark/cottage cheese. Simple & quick breakfast idea.

If you ask me I prefer savory breakfast and it’s hard to find inspiration online. It feels like everyone else love sweet breakfast.
Breakfast Cottage cheese / quark with greens
In our family cottage cheese/quark is main breakfast meal

Ingredients
- 2 packages cottage cheese (about 400 grams)
- 1 small or 1/2 long cucumber
- chopped leaks to taste (about 1/4 cup)
- dill to taste (frozen 1 tbsp)
- green salt
- sour cream to desired consistency (about 1/4 cup)
Directions
- Put cottage cheese/quark into bowl
- Cut cucumber, leek, and dill if using fresh and add to cottage cheese/quark.
- Add salt, sour cream and mix until combined. Eat with bread, scrambled eggs, etc..

I completely forgot about cottage cheese for breakfast! Yes, we used to have it quite often when I was living in back in Poland; kind of an Eastern European thing, indeed. Normally, we would have it with spring onion but leak and dill sound more interesting. I aim to try it asap. Thanks!

🙂 leek is “winter” option! In spring we add radish and dill, and in summer, cucumber, tomato, and dill, spring onions etc.

I thought your diet should be gluten-free. But gluten-free & dairy- free = almost vegan!

Yes, definitely! We went for gluten free vegan and sugar free few years ago, and it was crazy cooking for me, cause we were responsible for kids to have “everything they need” .. since that I’m doing simple cooking 🙂

what is green salt? And could you do a (veggie) recipe for Latvian grey peas? The only recipe I find in the internet is the standard Latvian recipe with grey peas and spek.

Green salt is basicly dried herbs with salt. Mine has green color and contains celery, parsley, leeks, onions, carrots, basil, sea salt.
