Layered Rye Bread Dessert

Latvian traditional Rye Bread dessert. Simple. Delicious.

All you have to find is Rye bread crumbs or dark rye bread! Everything else is easy!

Healthy Layered Latvian Rye Bread Dessert

Latvian dessert

Ingredients

  • 3 slices dark rye bread (~160 grams)
  • 6 tbsp lingonberry, blackcurrant, cranberry juice or jam (I prefer juice!)
  • 1/4 tsp cinnamon
  • 100 g wiped cream and vanilla sugar to make a wiped cream

Directions

  1. Grate slices of bread. Heat skillet and toast breadcrumbs over medium heat. Sprinkle with cinnamon and leave to cool.
  2. Make wiped cream.
  3. Mix bread crumbs with juice or jam.
  4. Start layering your dessert into dessert glass. Starting with breadcrumbs followed by whipped cream and continue until all the breadcrumb mixture is used.

  1. I love thhe simplicity of so many Latvian dishes (of which I’ve learned just from your blog); simple but always delicious. I have liked the black rye bread since I first tasted it many years ago but would never have thought of using it in this way. I will.

    1. Let me know or chat if you have any questions. There are many variations, but the main thing is – jam/jucie or whatever should be with sour taste 🙂

      1. I have the perfect thing. Don’t know what they’d be called in another language but in Romanian, visine. My favourite fruit. A kind of sour cherry.

        1. 🙂 I think that won’t be a good idea. It’s more like blackcurrants, cranberries, red currants, etc. But try and then we both know 😀

          1. Did I misunderstand you? I thought you said you preferred ‘sour’ juice. The juice from visine compote is just that. Usually I just drink it from the jar when I’ve finished the visine.

            1. Try it and let me know! I never had one with cherry :). Traditional is cranberry… my variation is black currants.

    1. You know I’ve shared this before on ilz’n’elle but I made it few days ago and couldn’t resist to bring recipe here.

    1. It is healthy if you don’t add too much sugar in whip cream and use juice… for example with honey instead of white refined sugar 🙂

  2. When I first read ‘Rye Bread’ and ‘Dessert’ I thought Ewww. But it looks and sounds delicious. I would really love to try this recipe.

    1. Yes, that is something that might sound Ewww! My husband still won’t taste it, but I grew up with this “interesting” taste 🙂
