There’s something magical about the first chanterelles. They always catch me by surprise — that golden pop in the moss, that earthy smell that says, yes, summer has truly arrived. It’s a small joy, but one I wait for every year.
This time, I didn’t go to the forest; these beauties came to me thanks to Līgo & Jāņi. I washed them and cleaned them of all the sand and moss, roughly chopped them, and let them sizzle in the pan until the kitchen smelled like the forest floor after rain.




Then came the cream, a bit of salt, and, of course, dill. I mean — I’m Latvian. There has to be dill.That’s it. No fuss. Just good ingredients and a little moment of gratitude for what the forest gives us.I served it simply with boiled potatoes. The kind of meal that makes you pause, eat slowly, and smile with every bite. We ate outdoors…

I don’t know mushrooms grow in Texas but I love them. When I cooked all the time used lots of mushrooms they are perfect for so many dishes. They look yummy.

Mushrooms really are so versatile, aren’t they? 🍄 I love how they can be the star of a dish or just add that perfect extra flavor. I’m not sure how easy it is to forage for them in Texas either, but I bet the grocery stores still have a good variety. I’d love to hear what dishes you used to cook with them! 😊

I can find them a specialty market we sometimes go to. When we shopped there often I always had to pick a few nicer types like chanterelles. I’ had mushroom twice last week, one for a stir fry and then for a salad. They always make a difference. 🙂

I buy mushrooms like baby portabella’s and they are great for salads.

They’re such a treat—earthy, a little peppery, and so full of flavor! 🍄 I really hope you get the chance to try them someday. They’re especially delicious sautéed with butter, onion, and a bit of cream. If I could, I’d send you a basket! 😊

I know that, Derrick! I commented on your post from last year that has a picture of yellow mushrooms – looked like chanterelles to me 🙂 But you need to ask a local forager for a guide 🙂 It’s worth it 🙂

Oh, I am so jealous in a good way though. So happy for you you can have them. We had some spots in the UK where we sometimes found them but haven’t yet found any here in Ireland 🤗

I totally get that kind of good-hearted mushroom envy! 😄 I actually lived in Ireland for 9 months, and I did go foraging while I was there—and yes, I did find chanterelles! 🍄 But don’t ask me where exactly… a local drove me to the spot, and like any good forager, they kept it a bit secret! 😅 I really hope you stumble upon a patch someday—they’re such a joy to find. 🤗

Any mushroom is a joy to find. We were lucky to have an old tree stump full of Oyster mushrooms that we harvested each year. As a forager you take what you can get 🤗
