Recipe: Nettle & Cheese Puff Pastry Triangles

I walked into the greenhouse… and I had to pick the nettles. They were growing everywhere.

I didn’t really have a plan—just a feeling that they shouldn’t go to waste. So I paired them with what I had: fettaki, cottage cheese, and a sheet of store-bought puff pastry.

And honestly? I was surprised how good it turned out. Crispy, creamy, a little wild—and very comforting. So here is the recipe:

Nettle, Fettaki & Quark Puff Pastry Triangles

  • Servings: 4 to 8

Ingredients

  • Fresh nettles (a large bowl, before blanching)
  • 1 egg (+1 extra for brushing)
  • A pinch of garlic powder (optional)
  • 1/2 pack fettaki cheese (or similar feta-style cheese)
  • 1 pack cottage cheese (quark)
  • 1 pack puff pastry (store-bought, thawed)

Directions

  1. Wash the nettles, blanch them briefly in hot water, then drain, chop, and squeeze out excess liquid. You should end up with a medium sized, dense ball of nettles.
  2. In a bowl, mix the nettles with 1 egg, cottage cheese, crumbled fettaki, and garlic powder (if using).
  3. Roll out the puff pastry and cut it into squares.
  4. Place a spoonful of filling onto each square.
  5. Fold into triangles (or squares), pressing the edges to seal. Brush edges with beaten egg to help them stick.
  6. Place on a baking tray, brush the tops with egg.
  7. Bake in a preheated oven at 220°C for about 20 minutes, until golden and puffed.
