Pan Fried Zucchini Slices

One of my summer time favorite light and delicious lunch in 15 minutes (including those few minutes, I spend running to the garden to get zucchinis). One thing you should know about zucchini is that they keep cooking after you take them off the pan. Make sure you take the zucchini off the pan before you think it is done. You don’t want mushy zucchini. Trust me… you don’t!

Salt gets the juice out of zucchini and that’s ideal for flour to stick on. Makes zucchini slices crisper.

Pan Fried Zucchini slices can be used as a side dish too.

Pan Fried Zucchini Slices

  • Servings: 1
  • Difficulty: easy

Light lunch or side dish

Ingredients

  • 2 small zucchini
  • 2 garlic cloves
  • salt & pepper
  • 1 1/2 tbsp flour
  • oil for frying

Directions

  1. Slice zucchinis and put in large bowl. Season with salt & pepper set aside.
  2. Mince garlic cloves and add to the bowl. Mix. Set aside.
  3. Heat the oil in the pan.
  4. Add flour to zucchinis slices and mix.
  5. Fry until golden brown on both sides. Set aside and repeat until all the slices are fried.

    1. After taking them off the pan, don’t layer – if you want them to be crisp. I put them in a bowl and don’t mind start with crisp (on top) and end with juicy ones at the end 🙂
