This is one of those breakfasts I make when I open the fridge and nothing really catches my eye.
Luckily, we always have eggs from free-range hens, and that’s usually enough to get me started. If I find some cheese, I grate it and mix it with the eggs. Then I spread the mixture onto slices of toast and pop them into the oven until they’re golden and delicious.





If I happen to have a tomato and some fresh basil on hand, even better. They add a little freshness and make the whole thing feel a bit more special.
A perfect breakfast for busy mornings.

Ilze – I don’t have to say a word . . . except ditto! ditto! ditto! and enjoy this or similar myself! I must say I do like my dark rye bread or sweet-sour and also alternate pickled herring in every form, anchovies in the Scandinavian not Portuguese way and smoked eel. On cottage cheese or smashed avocado – remember that is easy to get here most of he year! Big mug of black coffee alongside – not hungry until lunch! Well, Latva and Estonia are next to one another 🙂 !
