Finally Putting My Fermentation Course to Good Use

About a year ago, I took a fermentation course. I was so inspired, learned a lot, and came home full of plans… and then life happened.

Somehow, an entire year slipped by without me fermenting a single thing at home. Renovation, work, family, gardening—you know how it goes. There was always something more urgent waiting to be done.

But not anymore.

This week I finally dusted off what I had learned and started my very first batches: carrots and beetroot. It feels so good to finally begin! There is something incredibly satisfying about preparing fresh vegetables, packing them into jars, and knowing that nature will do the rest.

One thing I didn’t expect was just how colourful the whole process would be. Bright orange carrots, deep ruby-red beetroot… even the kitchen scraps looked beautiful. Usually vegetable peelings are destined for the compost without a second thought, but this time the cutting board looked like an artist’s palette. It almost felt like a shame to throw them away!

I’m looking forward to watching the jars bubble away over the next few days and, of course, tasting the results (in a month!). If all goes well, this will be just the beginning. There are so many vegetables and flavours I’d love to experiment with.

Better late than never, right? Sometimes all it takes is taking that first small step—and in my case, filling two colourful jars.

  1. Good on you . . . with the cold Nordic autumn and winter to come, what a joy to be able to open jars full of health brimming! I remember living with a girlfriend in Budapest for a month . . . there it was common for city-dwellers to have a tiny block of land (in a parkland of such) outside of town to be able to grow one’s own vegetables and fruits . . . well, her parents were just cutting/collecting hers and we spent a whole week of mornings in the kitchen with three long shelves of glass jars smiling down at the end of it! Good luck – enjoy now and very much later 🙂 !

    1. Nice! If I ever have to move back to city life for some reason, I’d definitely want a small patch of land for gardening. If not, I’ll just have to make the most of a balcony. 😊

  2. What a lovely reminder that inspiration doesn’t really have an expiry date! 😊 I especially loved the image of the vegetable scraps looking like an artist’s palette. Sometimes even the simplest kitchen moments can be unexpectedly beautiful. Now comes the difficult part… waiting a whole month to taste the results! 😄 Wishing your carrots and beetroot a very happy fermentation, Ilze!🙏🏻💛

    1. Thank you for such a nice comment!
I hope they will ferment well and will be delicious once ready 🙂
I’d say knowledge doesn’t have an expiration date either. 😊

  3. That is awesome! Good for you for getting started! And just think – those scraps will eventually become a future batch of delicious veggies and pickles 🙂
